Mario Batali's Root Vegetable Mash

This was really delicious.  Great fall dish.  I halved it for the 3 of us and we had plenty.  This full recipe would serve about 12 people.

2 large carrots, cut into 1/2" thick rounds
2 russet potatoes, peeled and cut into 1/2" cubes
2 medium turnips, cut into 1/2" cubes
2 medium onions, cut into 1/4" dice
2 med. parsnips, cut into 1/4" rounds
2 medium sweet potatoes, peeled and cut into 1/2" cubes
1/4 t. ground cinnamon
1/4 c. extra virgin olive oil
grated zest of 2 oranges
salt and pepper
1 bunch chives, finely chopped

  1. Bring the carrot, potato, turnip, onion, parsnip, sweet potato, and water to cover to a boil in a 4 quart saucepan.
  2. Lower to a simmer and cook until all the vegetables are soft, about 15 minutes.
  3. Drain the vegetable and pass through a food mill or mash thoroughly by hand.
  4. Stir in the cinnamon, oil, orange zest and season with salt and pepper.
  5. Stir in the chives and serve.
